Ingredient Details
  • (A) NASI LEMAK
    1. 400g Basmati rice (washed)
    2. 200g Coconut Milk / Santan
    3. 800g water
    4. 3 cloves garlic (peeled)
    5. 10g ginger (peeled)
    6. 3 (pcs pandan leaves (knotted)
    7. 1 tsp salt
    8. 4 pcs eggs (cleaned)
    9. 10-15 pcs ladies fingers / okra
  • (B) SAMBAL TUMIS ANCHOVY
    1. 200g anchovy (ikan bilis)
    2. 2 pcs big onion (sliced)
    3. 120g tamarind juice
    4. 20g sugar
    5. 1 tsp salt
  • Spice Paste
    1. 15 pcs dried chilli (soaked)
    2. 150g shallots
    3. 3 cloves garlic
    4. 2 stalks lemongrass
    5. 10g galangal
    6. 10g fresh turmeric
    7. 10g belacan (shrimp paste)
    8. 50g oil

Cooking Method
Step 1
NASI LEMAK
Place garlic and ginger into    to chop 5 sec, Sp 6.
Insert simmering basket with washed rice into   . Put chopped garlic, ginger and knotted pandan leaves onto rice.
Pour water and coconut milk into    to cook. Place cleaned eggs into Varoma dish and arrange ladies fingers onto Varoma tray. Stack Varoma unit in position to steam 20 min, Varoma, Sp 3.
Step 2
NYONYA SAMBAL TUMIS IKAN BILIS (ANCHOVY)
Place spice paste ingredients into    to blend 30 sec, Sp 0-6-10.
Saute unti aromatic, 5 min, Varoma, Sp 2.
Add in tamarind juice, onion, sugar and salt to cook 3 min, Varoma,     .
Lastly, add in roasted ikan bilis (anchovy) to cook 2 min, Varoma,     .
Step 3
Serve Nasi Lemak with Sambal Tumis Ikan Bilis (Anchovy) and side dishes such as hard boiled egg and steamed ladies fingers.
